Roasted garlic and rosemary with a 48 hour cool proof... So yummy 🤤 My preference is to use 1/2 roasted garlic and 1/2 raw garlic to really accentuate the taste. Boogasse foogasse for 2024! It's a fun style to revisit once a year... And I really love how, unlike scoring standard loaves, you pretty much know what you're going to end up with before it goes in the oven! Pre-baked pics are on my previous post btw. Low hydration loaf for a lazy day 🤣 I usually like to work with high hydration dough for the resulting open crumb, but sometimes I find it so much easier to do a low hydration loaf to avoid having to flash freeze it before an intricate score! This one was only 75% hydration, and barely moved during the scoring which was nice.... but I did miss the more open structure when all was said and done 🤷🤦 I have a 90% hydration loaf on the go right now... Expansion Scores vs. Artistic Scores… This loaf shows the difference between expansion scores and artistic scores beautifully! The deeper lines around the leaf patterns are expansion scores—they allow the dough to open up as it rises. On the other hand, the lines within the leaves are artistic scores. These don’t help the loaf expand as much; they’re mostly for aesthetics, giving the bread a detailed finish. Always fun to try other people's designs... Saw this one from @yanabacheva so I tried my own spin on it. TBH I liked hers a lot more 🤣 It was still fun though! 🚨MasterChef starter alert!🚨 I met Hope at a @realbreadcampaign event where she had brought some delicious sourdough buns 🤤... and had no idea that she was about to appear on MasterChef! Not only did Hope compete, but her starter Killian also featured on the series in two recipes! Congrats to both for making it to the MasterChef semi-finals! Today we have Betsy and a lockdown baby - "Dr. Fauci" 🤣 Betsy and I only met through the Showdown but she's from my old stomping grounds in the SF Bay Area where Betsy tells me that "Dr. Fauci" was used to warm weather... so he seemed to love the warm environment of the Showdown's 25°C/77°F environment in the Autoproofer. Deena's "Bray Wyatt" starter is a terrific all-around starter and it was great fun to see the huge bubbles he produced... so much so that I left the profiling session running for hours after the peak just to see the full picture from start through to collapse. Garlic & rosemary... with a twist!... I love roasted garlic but my favourite combo is to use half semi-roasted garlic and half raw garlic. Then it all bakes so nicely with the bread and the combination with milled fresh rosemary is absolutely amazing. I dropped the hydration to 75% and then bulk fermented for 4 hours, cool fermented (11°C/52°F) for 24 hours, then another 12 at normal fridge temp.
